The Elephant team creates the canapes in celebration of Norway Day

Simon and the team were once again invited to prepare the canapés for over 250 guests at the Norwegian Ambassdor’s residence in celebration of Norway Day.

Norway Day takes place on 17 May, in celebration of the constitution of Norway being signed. The Norwegian ambassador hosted the party on the eve of Norway Day and invited our team to prepare a delicious range of canapés for her illustrious guests.

The canapés were all prepared by Simon and his team of five chefs (pictured) and included Ceviche of Norwegian halibut from Glitne, red onion, fennel, coconut and chilli, Beetroot and Aquavit cured Norwegian Fjord trout, Roasted Norwegian cod, verjus and parsnip and wild garlic arancini, nasturtium purée for the vegetarians.
